Ingredients

1 small head cabbage ( 1 pound ) thinly sliced or 1 bag ( 16-oz coleslaw mix )shopping list

½ cup chopped green bell pepper

½ cup chopped onion
-
2 Tbs. chopped pimiento or red bell pepper

½ cup cider vinegar
-
3 Tbs. vegetable oil
-
12 packets Equal or sugar substitute equivalent

1 tsp. celery seed
-
½ tsp. dry mustard
-
¼ tsp. salt
-
1/8 tsp. ground black pepper
Directions

Combine cabbage, green pepper, onion and pimiento in a medium bowl.

Measure remaining ingredients into a jar; cover with lid and shake to blend well. Pour dressing over vegetable mixture and toss to coat. Refrigerate, covered at least 2 hours to allow flavors to blend.
