Ingredients

  • 2 lbs ripe tomatoes

  • 2 medium zucchini

  • 2 large cucumbers(unpeeled (English or hothouse))

  • 1 small red onion

  • 4 cloves of garlic (peeled)

  • 1 large red bell pepper

  • 1 tbsp balsamic vinegar

  • 1 cup vegetable juice

  • 1 Dash salt

  • 1 Dash pepper

Directions

  1. In a food processor finely chop the vegetables and garlic in batches. Place into a large glass bowl.

  2. Add balsamic vinegar, vegetable juice, salt, and pepper. Chill for at least an hour.
